5-Minute Chocolate Mug Cake

When you need a dessert immediately but don’t want to deal with the oven or a pile of dirty dishes, the chocolate mug cake is the ultimate solution. This recipe creates a moist, rich, and “molten” center cake using only a few pantry staples and a microwave.

Unlike many microwave desserts that can turn out rubbery, this version uses a specific ratio of liquid to flour to ensure a tender, bakery-quality crumb.


Ingredients

  • 1/4 cup All-purpose flour

  • 2 tbsp Unsweetened cocoa powder

  • 1/4 tsp Baking powder

  • 2 tbsp Granulated sugar (or maple syrup)

  • 1/4 cup Whole milk

  • 2 tbsp Neutral oil (vegetable, canola, or melted coconut oil)

  • 1/4 tsp Vanilla extract

  • 1 tbsp Chocolate chips (optional, for a molten center)

  • Pinch of salt


Instructions

1. Mix the Dry Ingredients

Find your favorite microwave-safe ceramic mug (standard 12 oz size works best). Add the flour, cocoa powder, sugar, baking powder, and salt directly into the mug. Whisk with a small fork until well-combined and no large lumps of cocoa remain.

2. Add the Wet Ingredients

Pour in the milk, oil, and vanilla extract. Whisk gently until the batter is smooth. Be sure to scrape the bottom “corners” of the mug to ensure no dry flour is left behind.

3. The “Molten” Secret (Optional)

If you are using chocolate chips, drop them right into the center of the batter. Do not stir them in; let them sink naturally. They will melt during the cooking process to create a gooey core.

4. The Microwave

Place the mug in the microwave. Cook on high for 70 to 90 seconds.

  • Note: Microwave wattages vary. At 70 seconds, the top should look set but slightly shiny. Do not overcook, or the cake will become dry.

5. Rest and Serve

Let the cake sit for 2 minutes before eating. This is the most important step; the residual heat finishes the cooking process and allows the texture to set. Top with a scoop of vanilla ice cream, a dollop of whipped cream, or a dusting of powdered sugar.

  • The Mug Choice: Use a mug with straight sides rather than a tapered bottom to ensure the cake cooks evenly from top to bottom.

  • Make it Vegan: This recipe is easily adapted. Simply use almond or oat milk and coconut oil.

  • Add Texture: Stir in a teaspoon of peanut butter or a few crushed walnuts before microwaving for a different flavor profile.

  • Cleaning Tip: Soak the mug in warm soapy water immediately after eating to make cleanup effortless.
