BEST HOMEMADE SALSA EVER

If you’re managing hypothyroidism, this “Best Ever” salsa is a total win. It’s packed with zinc and vitamin C, and since you’re making it at home, you’re skipping the massive amounts of sodium and hidden thickeners found in the jarred stuff.

This is a “Restaurant Style” salsa—meaning it has that perfect, slightly blended texture rather than being chunky like a pico de gallo.

🍅 The “Secret Sauce” Ingredients

  • 2 cans (14 oz each) Whole Peeled Tomatoes: (Look for “No Salt Added”). Canned tomatoes actually provide a better consistent texture for this style than fresh.

  1. Prep the Base: Combine the canned tomatoes (drain one can, keep the juice in the other), Rotel, onion, garlic, jalapeño, cilantro, honey, cumin, salt, and lime juice in a food processor or high-powered blender.

  2. The Pulse: This is the most important step. Do not just turn it on and walk away. Pulse the blender 10–12 times in short bursts. You want it to be broken down but still have tiny visible bits of onion and cilantro.

  3. The Taste Test: Dip a chip (or a piece of your skillet flatbread!) and check for salt and lime.

  4. The “Chill” Phase: You can eat it immediately, but if you let it sit in the fridge for at least one hour, the flavors marry and the heat from the jalapeños mellows out beautifully.
