ITALIAN SAUSAGE WITH PEPPERS AND ONIONS

This is a classic “Street Fair” style Italian comfort dish. It’s hearty, colorful, and smells absolutely incredible while it’s simmering. Whether you serve it on a toasted hoagie roll or over a bed of creamy polenta, it’s a guaranteed winner for a weeknight dinner or a game-day crowd.

  • Large Skillet: Cast iron or a heavy-bottomed stainless steel pan is best for browning.

  • Tongs: For flipping the sausages without piercing the casings.

  • Chef’s Knife: For slicing the peppers and onions into uniform strips.

  • Sausage: Use high-quality links from the butcher counter. If you want a milder flavor, go with “Sweet Italian”; if you want a kick, go “Hot.”

  • The Peppers: Using a variety of colors isn’t just for aesthetics; red and yellow peppers are sweeter, while green adds a nice earthy bitterness.

  • The Liquid: The wine or broth is used to deglaze the pan, picking up all the brown bits (fond) from the sausage which contains all the concentrated flavor.


🛠️ Cooking Instructions

  1. Sear the Sausages: Heat 1 tablespoon of olive oil in the skillet over medium-high heat. Add the sausage links and brown them on all sides (about 5–7 minutes). They don’t need to be cooked through yet. Remove them to a plate.

  2. Sauté the Aromatics: In the same skillet, add the remaining oil. Toss in the sliced peppers and onions. Sauté for 8–10 minutes until they are softened and starting to brown at the edges.

  3. Season: Stir in the minced garlic, oregano, and red pepper flakes. Cook for just 1 minute until fragrant.

  4. Deglaze: Pour in the white wine (or broth). Use a wooden spoon to scrape the bottom of the pan to release the flavor.

  5. Simmer: Slice the browned sausages into 1-inch coins (or leave them whole if serving on rolls). Add them back into the skillet with the peppers.

  6. Finish: Reduce heat to medium-low, cover, and cook for another 5–7 minutes until the sausages are cooked through and the sauce has thickened slightly.
