Cowboy Meatloaf and Potato Casserole

This dish is the “all-in-one” heavy hitter of ranch-style cooking. It combines a seasoned meatloaf base with a creamy, cheesy mashed potato topper—essentially a Western-style Shepherd’s Pie, but with the bold, smoky flavors of a BBQ cookout.


The Two-Layer Strategy

Layer 1: The Cowboy Meatloaf

  • 1.5 lbs Ground Beef (80/20 mix works best for flavor).

  • 1/2 cup Breadcrumbs (or crushed crackers).

  • 1/2 cup BBQ Sauce (this replaces the traditional ketchup for that “cowboy” kick).

  • 1/2 cup Diced Onion & 1 Diced Jalapeño (seeded).

  • 1 Egg (the binder).

  • 1 tbsp Worcestershire sauce.

Layer 2: The Loaded Potato Topper

  • 4-5 Large Potatoes (peeled, boiled, and mashed).

  • 4 tbsp Butter & 1/4 cup Milk.

  • 1 cup Shredded Sharp Cheddar Cheese.

  • 1/2 cup Cooked Bacon Bits.

  • 2 Green Onions (sliced).


The Instructions

  1. The Base: Preheat your oven to 375°F. In a bowl, mix all the meatloaf ingredients. Press the mixture into the bottom of a 9×13 inch baking dish (or a deep-dish pie pan). Spread it out evenly so it looks like a thick “crust.”

  2. The Pre-Bake: Bake the meat layer alone for 20 minutes.

    • Tip: If there is excessive grease pooling at the edges after 20 minutes, carefully drain it off before adding the potatoes.

  3. The Topping: While the meat bakes, whip your mashed potatoes with the butter and milk. Fold in the bacon and half of the cheese.

  4. The Assembly: Spread the mashed potatoes over the hot meatloaf base. Use a fork to create “peaks” in the potatoes—these will get crispy and golden.

  5. The Finish: Top with the remaining cheese. Bake for another 20–25 minutes until the meat is fully cooked (160°F) and the cheese is bubbling and slightly browned.


Pro-Tips for “Cowboy” Authenticity

  • Smoke it Up: Add a teaspoon of Liquid Smoke or Smoked Paprika to the meat mixture to give it that “cooked over a campfire” essence.

  • The Corn Secret: Many cowboy versions stir a small can of drained sweet corn or black beans into the meatloaf layer for extra texture and heartiness.

  • The Crust: If you want a truly crispy top, turn on the broiler for the last 2 minutes of cooking.
