Blow Your Mind Banana Pudding

This is the “grand finale” of Southern desserts. Traditional banana pudding is usually a sugar bomb that can leave you feeling sluggish—not ideal when you’re already managing thyroid-related fatigue.

This version is “Blow Your Mind” because it tastes incredibly decadent, but we’ve swapped the instant boxed pudding for a homemade vanilla custard. This gives you a richer flavor and removes the artificial thickeners and excess sodium found in processed mixes.


🍌 Ingredients

The Real Vanilla Custard:

  • ½ cup Honey or Maple Syrup (instead of refined white sugar)

  • 3 tbsp Cornstarch (or Arrowroot powder)

  • Pinch of salt

  • 3 cups Whole milk (or full-fat coconut milk for a dairy-free, rich option)

  • 3 Large egg yolks (beaten)

  • 2 tbsp Butter (grass-fed is best for those Omega-3s!)

  • 1 tbsp Pure vanilla extract (don’t use the imitation stuff!)

The Assembly:

  • 4-5 Ripe bananas (sliced into rounds)

  • 1 box Vanilla wafers (or gluten-free ginger snaps for a thyroid-friendly twist)

  • Optional: Homemade whipped cream (heavy cream whipped with a splash of vanilla)

1. Mix the Base

In a medium saucepan (off the heat), whisk together your sweetener (honey/syrup), cornstarch, and salt. Gradually whisk in the milk until smooth.

2. Thicken the Custard

Place the pan over medium heat. Stir constantly with a whisk or wooden spoon. Once it starts to bubble and thicken (about 6–8 minutes), reduce the heat to low.

3. Temper the Eggs (The “Chef” Step)

You don’t want scrambled eggs in your pudding! Take a small ladle of the hot milk mixture and slowly drizzle it into your bowl of beaten egg yolks while whisking the yolks constantly. Once the yolks are warm, pour the egg mixture back into the main saucepan.

4. The Final Thickening

Cook for another 2–3 minutes on low, stirring constantly. Remove from heat and stir in the butter and vanilla extract. Let it cool for about 15 minutes (it will thicken more as it cools).

5. The Layering (The Fun Part!)

In a glass bowl or trifle dish, create the layers:

  1. A layer of vanilla wafers on the bottom.

  2. A layer of sliced bananas.

  3. A generous pour of the warm custard.

  4. Repeat until you reach the top!

6. The “Chill” Phase

Cover with plastic wrap (press the wrap directly onto the surface of the pudding to prevent a “skin” from forming). Refrigerate for at least 4 hours, but overnight is best. This allows the cookies to soften into a cake-like texture.

  • Egg Yolks: These are a powerhouse of Selenium and Vitamin D, both critical for converting T4 thyroid hormone into the active T3 version.

  • Bananas: They provide Potassium and Vitamin B6, which help support adrenal health (the thyroid’s “sister” gland).
