Marinated Cucumber Onion and Tomato

This is the quintessential Southern side dish. It’s bright, refreshing, and—most importantly for your thyroid health—it’s raw-veggie friendly.

While raw cruciferous veggies (like kale or broccoli) can be tricky for the thyroid, cucumbers and tomatoes are “goitrogen-free,” meaning they won’t interfere with your iodine uptake. Plus, the vinegar in this recipe helps stabilize blood sugar spikes!


🥒 Ingredients

  • 2 large English Cucumbers: (The long ones in plastic wrap) Sliced into thin rounds. These have thinner skins and fewer seeds.

  • 3 medium Roma Tomatoes: Sliced into wedges.

  • 1 small Red Onion: Sliced into very thin half-moons.

  • ½ cup Apple Cider Vinegar: (With “The Mother” for probiotic benefits).

  • ¼ cup Water

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tbsp Honey or Maple Syrup: (Avoids the refined white sugar usually found in Southern recipes).

  • 1 tsp Dried Oregano (or fresh dill if you prefer).

  • ½ tsp Sea Salt & ½ tsp Black Pepper

1. Prep the Veggies

Place your sliced cucumbers, tomatoes, and red onions in a large glass bowl.

Pro-Tip: If you find raw onions too “sharp,” soak the slices in ice water for 10 minutes before adding them to the bowl. It removes the sting but keeps the crunch.

2. Whisk the Marinade

In a small jar or bowl, whisk together the apple cider vinegar, water, olive oil, honey, oregano, salt, and pepper until the honey is fully dissolved.

3. Marinate

Pour the dressing over the vegetables and toss gently to coat.

4. The “Chill” Factor

Cover the bowl and refrigerate for at least 2 hours. You can eat it sooner, but the magic happens when the cucumbers slightly pickle in the vinegar and the tomatoes release their juices into the dressing.
