Soft Homemade Skillet Flatbread Pita Style

This skillet flatbread is the “holy grail” for thyroid-friendly cooking because you control the ingredients—no hidden preservatives or excess sodium. It’s soft, pliable, and perfect for dipping into hummus or wrapping up grilled chicken.

📋 Ingredients

  • 2 cups All-purpose flour (or a 1:1 gluten-free blend if you are avoiding gluten)

  • ¾ cup Warm water (about 110°F)

  • 1 tsp Active dry yeast

  • 1 tsp Honey or sugar (to feed the yeast)

  • 2 tbsp Olive oil (plus a little extra for the bowl)

  • ½ tsp Sea salt

1. Activate the Yeast

In a large bowl, combine the warm water, honey, and yeast. Let it sit for about 5–10 minutes until it becomes frothy. This lets you know the yeast is alive and ready to work.

2. Mix the Dough

Add the olive oil and salt to the yeast mixture. Gradually stir in the flour until a shaggy dough forms.

3. Knead

Turn the dough onto a lightly floured surface. Knead for about 3–5 minutes until it feels smooth and elastic.

Note: If the dough is too sticky, add flour 1 tablespoon at a time. If it’s too dry, add a tiny splash of water.

4. The First Rise

Lightly oil your bowl, place the dough inside, and cover it with a damp cloth. Let it rest in a warm spot for about 1 hour, or until it has doubled in size.

5. Shape and Roll

Punch the dough down to release air. Divide it into 6 to 8 equal pieces. Roll each piece into a ball, then use a rolling pin to flatten them into circles about ¼ inch thick.

6. The Skillet Magic

  • Heat a cast-iron or non-stick skillet over medium-high heat. Do not add oil to the pan; you want a dry sear.

  • Place one flatbread in the hot skillet.

  • Wait for bubbles to form on the surface (about 1–2 minutes).

  • Flip and cook for another 1 minute. It should have beautiful golden-brown charred spots.


💡 Pro-Tips for Success

  • The Softness Secret: As soon as you remove a flatbread from the pan, place it in a basket lined with a clean kitchen towel and fold the towel over it. The steam keeps them soft and prevents them from turning into crackers.

  • Pita Pockets: If you want them to “puff” like a true pita, make sure your skillet is very hot. The shot of steam inside is what creates the pocket.

  • Thyroid-Friendly Swap: Use extra virgin olive oil instead of butter or vegetable shortening to keep those healthy fats in check!
